In January of 2013, The Flavor Chef launched an e-commerce store thebrothery.com. The Brothery® distributes Genuine Chicken Bone Broth nationwide across the continental United States. In 2013 the company produced and distributed close to 8000 units between local and nationwide sales.

 

Chef Lance Roll is considered by many to be an expert in the industry of Bone Broth production. He has been sought after for multiple interviews on Internet Pod Casts, Wellness Summits, and National Blog Talks such as The Underground Wellness Show with Sean Croxton. Chef Lance Roll has also had multiple interviews and demonstrations on local news channels, Fox News In The Morning and most recently San Diego Living.

Chef Lance Roll has been professionally cooking for 25 years. His career started in 1988 when he joined the team with Chef Mark Strausman at Sapore Di Mare in New York. He spent 2.5 years there learning classical European cooking principals and Tuscan Cuisine.

The Flavor Chef’s Grass Fed Beef Broth

Sourcing our Grass-Fed Beef Bones has taught us a few things. For one, large cattle do not yield a lot of bones byproduct, because so many cuts are sold bone-in. So we source in limited quantities from a couple of excellent ranches, which operate throughout California.

Your Beef Bone Broth may contain knuckles, femurs (marrow bones), pipes, scapula, hooves and neck bones. We add some Organic Red Wine to deglaze the roasting pans then add deep well drinking water from San Diego County.

Bone Broth Ingredients

Artisan well water from the Carlsbad Mineral Spa (www.carlsbadmineralspa.com to learn more) This water is naturally a ph of 9.2. Mary’s Free Range bones and feet(www.maryschickens.com) The vegetable combo of carrots, celery, onions, (sometimes leeks) garlic, and ginger are always organic and many times locally sourced. The other ingredients include Kombu (kelp) ,
a sea vegetable that is wild harvested and adds to mineral content and a beautiful mouth feel to the broth . Organic Apple cider vinegar and lemons (the acid aids in mineral extraction from the bones and flavor) fresh parsley, fresh thyme, dried bay leaves, peppercorns and Celtic sea salt (roughly 2 ounces per 40 quart pot of soup)
